Savory Egg & Vegetable Fried Rice

ingredients:

  • 2 large eggs
  • 2 tablespoons milk
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • 2 cloves garlic, chopped
  • 1 cup carrots, sliced
  • 1/2 cup green peas
  • 2 cups leftover or cold rice
  • 1/4 cup soy sauce
  • 2 teaspoons sesame oil
  • 1/4 teaspoon white pepper
  • 1/2 cup cashews


instructions:

  1. In a small bowl, beat eggs and milk together until combined
  2. Heat skillet on medium-high heat
  3. Add butter and melt
  4. Add egg mixture and let cook for 2 to 3 minutes, until opaque and firm
  5. Remove eggs from the pan and set aside
  6. Add vegetable oil, garlic, and onions. Sauté until onions are translucent (1 to 2 minutes)
  7. Add carrots and peas and sauté until soft (2 to 3 minutes)
  8. Add cold rice, soy sauce, sesame oil, and white pepper
  9. Stir a couple of times
  10. Roughly chop eggs and add to rice mixture
  11. Add cashews
  12. Stir fry for 5 to 7 minutes
  13. Serve
